Why polished steel

We use polished steel paella pans, the traditional material for Valencian paella. Steel distributes heat quickly and evenly thanks to its thickness, which also gives greater rigidity and durability.

The base has tiny dimples that improve thermal distribution. The surface is slightly convex with sloped sides: oil collects in the center and you can move the sofrito toward the edges as it cooks.

This design allows the authentic Socarrat. With steel, the rice clings to the metal and toasts. With non-stick, it slides.

The thin layer

Valencian-style paella is known for a thin layer of rice. The capacity of each pan varies depending on the rice height: the higher the rice, the more servings.

Using a 60 cm pan for 4 people is not a mistake. It is the opposite. Many places use that same size for 15 or 20 diners. The rice becomes compacted, with uneven cooking.

We use it for 4: the rice ends up as a single-grain layer. Every grain touches the metal. Even cooking, concentrated flavor. This explains both the price and the result.

About the deposit: As pure steel without coatings, the pans need immediate drying and oiling. They are professional tools, not household containers. The deposit is refunded upon return.

Pick up your freshly made paella. A small deposit for the metal pan ensures the authentic flavor.

Enjoy at home. When you return the pan to the shop, we refund the deposit in full.

On-Site Service

Our rice master comes to your location to cook live. Available for private celebrations and corporate events.

How does the paella pan deposit work?

We avoid single-use containers, so we charge a symbolic deposit for the professional metal pan. The full amount is refunded when you return the pan clean to the shop.

How far in advance should I order?

We recommend 1–2 hours, especially on weekends. Same-day orders accepted until depending on availability.

How do I reheat the rice if it cools down?

NEVER use the microwave! The pan is metal.

Correct method:

  • Oven blast at 180ºC for 3–5 minutes
  • Gentle direct heat for 1 minute
